The Deviled Egg Made Me Do It… (It’s a yoke, son)

Hard boil eggs (I usually do at least 6 at a time)
Remove shell when cool, and cut in half top to bottom long ways.
Place yokes in bowl, place whites on plate (plates designed for devils are very fun)
Mix till smooth: about 3 tablespoons *mayo for 6 eggs, mustard to taste, salt and pepper. (*for those of the Miracle Whip persuasion, that works too, just not for me.)
Optional add ins: finely chopped onion and/or celery, pickle relish (be sure to squeeze the liquid out).
Once white halves are filled with mixture, sprinkle with paprika, or you can garnish with cilantro, capers, bits of bacon, sliced jalapeño, sliced olives (any kind). Chill well before serving.
